So I found a tech that could solve the problem for me. Rather than let cox decide I needed an IMAP account, I was told to intentionally misspell the domain (ccox.net). When it couldn't resolve the account, I was FINALLY given the choice of setting up POP or IMAP. Once I selected POP, I was off to the races and things set up fine. I HATE when people/businesses assume they know what I want.

Worst part of this was NONE of the other techs had a clue. After Cox told me it was an Apple issue, I called Apple, and we all had a good laugh. Thunderbird works fine. This issue was predominately on my iPhone.
