According to the link KevinM2 provided, you should be able to start a recording late or end it early.
- Use the up and down arrows to choose 1 or 2 minutes early, then press OK.
- Use the up and down arrows to choose 1, 5, or 30 minutes late, then press OK.
- For live events, the options are 30, 60, or 90 minutes late. Recordings of some live sports events will be extended automatically for overtime or extra innings.
Or, you could replace the Contour 2 with a Contour receiver that can be set to start on time, 1-5,10,15, 30 minutes late or 1-5, 10, 15, 30 minutes early as well as end on time, 1-5,10,15, 30, 60, 120, 180 minutes late or 1-5, 10, 15, 30 minutes early.
Correct, but the 1 or 2 min early is just to start a recording, not to end it. And same with the 1, 5, or 30 min - that’s to end it later not end it earlier.
I used to be able to start a recording 1 or 2 or 5 min late (so the program had started) and end a recording 1 or 2 or 5 min early (so the program wouldn’t quite be finished yet). This allowed for more shows that were on different channels, but whose recording times in the system overlapped, to be able to be recorded. From the replies, I’m guessing this is no longer an option with the ‘upgraded’ Contour 2 box.

Edited: It's my understanding that Contour 2 no longer provides a "Set Manual Recordings" option. But, Cox user keddy posted workaround instructions that would allow you to set a Contour 2 manual recording for the channel you want to record from 8:01 to 9:00.
Contour 2 is marketed by Cox as an "upgrade" and it does have some interesting features. But for recording and watching programs, I still prefer the original record 6 Contour receiver. Among its features that I prefer are the variety of start and end times I listed in my previous post. Cox has said they will allow existing customers to swap a Contour 2 receiver for a Contour. A customer just can't have a mix of the two. It must be one or the other.
