Speific instructions for e-mail setup on an iPhone can be found here.  iOS autoconfig e-mail setup defaults to IMAP for cox.net addresses.  If you are ok with IMAP, no servers need be entered, autoconfig works.  If you want to setup your e-mail as POP3, it's a little more complicated:

1. Enter a dummy e-mail address on the New Account screen, something like yourid@cox.cox
2. iOS won't be able to login and autoconfig your account ... it will bring you to a second screen where you can select IMAP or POP3.
3. Enter your correct e-mail address & password and correct server from Teck's link.

There is no way to bypass the auto-config? Why can't apple design a decent mail app?

If you enter your valid e-mail and password, it goes directly to autoconfig, logs on to your account and senses what the server can handle.  If the server handles IMAP, it uses that, never gives you an option for manual config or select POP3.  Once setup with IMAP, there is no way to change it .... all you can do is delete the account and re-setup.

Guess this is the fruit co's way of KISS.
