You are correct. Guest network capability was removed years ago to be able to provide wireless cable boxes that connect automatically to the pano WiFi.
Personally I use a Netgear CM2000, and a Netgear Nighthawk RAXE300, and it's a great combo. I used to have an Arris DG2460, and was sent a pw7 when I upgraded, here is my testing head to head.

That sounds like a nice setup Darkatt ... maybe I'll look at something similar if I can't get this working well.
I'm sort of at a standstill at the moment: I put the new Cox modem into bridge mode but then couldn't get my router (Deco mesh) to connect to it. Now can't get the Cox modem set back to 'normal' since I no longer have a laptop with a network port.
So I'm back on Verizon for now until I can figure out how to get the Cox modem/router reset. (Could not find the expected Reset button ... plan to get a USB-C to RJ45 adapter tomorrow and start over!)

While I won't have much info on how to setup a mesh network with the device, I can advise on how to factory restore it. If your model does not have the small pin hole in it, you can press and hold the WPS button for 60 seconds to factory reset it.

One question: my Cox WiFi app is now unable to connect with the gateway … most stuff in the app seems to work, but when I try to connect to the gateway itself the app tells me the gateway is offline and not available. I know that is not correct as I’m connecting through it at the time. Any idea what to do about that?
I recommend uninstalling the app and re-installing. Sometimes, resetting your password prior to re-installing will also help resolve this.
Make sure after putting in bridge mode, the ONLY thing that connects is the router. NOTHING on WiFi to the pano modem, since it will provide only a single IP address to the first device that talks to it. If worst comes to worst, ensire the ethernet cable fromt he pano is going to your router's IN port, and then powercycle the pano.
Alternatively you can factory reset the pano, and instead of bridge mode, setup YOUR router as an access point. All other configurations should remain the same, the only difference is IP addressing will be handed out by the pano, and that way you don't get a double translation layer causing you issues.
