Switching my channels to paid advertisements and monitoring what I watch.

I work from home and often I have the T.V. on while I work. I like to listen to games, or sports chat, and when somethings interesting I'll look up. Several times, while I'm in the room, working, the channel will go temporarily off air. Up until today, I thought that was just something that happened. However today a message popped up and said something to the effect of, "in order to continue watching this channel press select or the channel will temporarily go offline."  Really? Why? So if I walk out of the room to grab a cup of coffee after watching/listening for several hours and that pops up, I'm SOL? What kind of garbage is that?  Several times I've gone to bed with the TV on one channel and woken up to it switched to channel 7 and it's broadcasting infomercials. So it's ok to watch as long as I want as long as I'm watching paid advertisements?  How do I stop this from automatically happening?

This sounds like SDV at its finest. To save bandwidth, channels transmitted as SDV channels have to be "asked for" by the STB in order to be viewed. Also, when a SDV channel is tuned, and there has been no STB activity for 3-4 hours (I think it's 4 hours), the system will poll you to make sure you're still there. If you don't reply, the system will stop transmitting that SDV channel (freeing that bandwidth) and switch you to a low bandwidth channel. What can you do? Don't leave your STB tuned to a SDV channel if you going to be away from the TV for a few hours. Or, simply press the channel up/down on your remote (or the SELECT button if you're so inclined. Cox has around 200 channels on SDV status in some areas.
