Since this morning I have been receiving interruptions in service every 2 minutes for about 2 minutes. Seems only to be effecting HTTP requests, streaming and game data seem unaffected. Router and Modem have been reset. Problem persists across multiple devices; desktop, laptop, smartphone.
Any insight here would be great!

If its just HTTP first thing that comes to mind is DNS, since streaming and game data is usually UDP. Try switching to Google DNS (either on router or on PC).
Other than that, do you have any logs or tracert? For instance, how do you know its just effecting HTTP requests? Do other HTTP transactions clear? Or do you mean inbound HTTP request?
Last, have you tried bypassing the router?

Thanks for the info Health Edge, I had forgotten that I had NOT switched the DNS of the new router to Google DNS and was in fact, still running through Cox DNS. Switched them up and everything is running fine, (Faster perhaps, or maybe it just seems to.)
