IMAP and email-- I hate it!!!!
If only i could disable the "SYNC" feature of IMAP I would be happy. I have a Mac and 2 Ipads. all used for differant purposes. Example: I receive an email bill. I want that bill to stay in the in box on my Mac, but want to delete it from my Ipads. If I delete it from my Ipad, it removes it from my Mac also. Unacceptable!! IMAP also emptied some 4000 emails from my trash and sent mail, which I frequently search for items I didn't know I needed. Is there any way to retrieve these. I have plenty of disk space.
I also spent many hours in the last few days talking to Cox and Apple support trying unsuccessfully to change back to POP servers.

The way you would like to use your email it sounds like POP may be the best option for you to choose. I am not sure the iPads will allow for that, I have seen where sometimes the email setup does not give the option to use POP email. What errors did you get when trying to use POP?

You are correct, Derrick, sometimes iOS email is too smart for itself. When you create an email account and enter your cox email address and password, iOS knows Cox supports imap, sets up an imap account and doesn't allow you to change it
The work-a-round is kind of simple, you have to fool iOS. When first setting up the account, enter a dummy email address. I used rmyname@coxx.net. iOS won't be able to find defaults for coxx.net and ask you if you want to setup a POP3 or IMAP account. You can then correct your email address and configure your e-mail using the settings here. The iOS default for POP accounts is never delete from server. You can change that by going to advanced settings under the POP email account and changing "Delete from server" setting. HTH
