New Spam filter and email recipient list on the new email software that recently replaced the "Classic" email software.

Spam filter on new using new email software is now blocking out too many emails that used to get though. There does not appear to be any way to set the sensitivity level of the Spam filter?   Also I like the feature of the old "Classic email" were I would select the recipients for an email from a pull down list. Now that feature is gone and I have to type in each name separately.  Is there any way to get back the old pull down list? It was very convenient and I miss it.
