My area was recently updated to Ultimate 300 and when the change happened I didn't notice my speed jump at all. I chatted with tech and they told me i needed a 16x4 modem vs my old 8x4. I was bonding 8 channels on the old and when initial plugging in the new modem it was only bonding 4 channels. A few hours after install it jumped to 8 but my speeds are horrible! They are ranging from 20mpbs to 140mbps. No where near 300 or even 200mpbs.
I have chatted with tech support again and they said something wasn't set right and changed some things but it did nothing. Speeds actually got slower. They don't know how to get the modem to bond to 12 or 16 channels to get the rest of my speed. Any help?!?

Can you post the speed tests?
Also, are you testing while wired direct through the SB6183?
Last, what are your signal levels? Should be able to find them on 192.168.100.1

See the photos above.
Only shows 8 channels vs 12 or 16 (i was told i needed this modem to get 200mbps
The speedtests are all done wired and yes I've tried direct to modem. You can see the history graph where none have even come close to 200 let alone 300

Think there is more then one problem. First, I would suggest calling Cox, or having a moderator check, that you have the correct Ultimate service code on your account. It should be Ultimate 300.
Second, Cox sometimes has to manually set SB6183 to channel bond properly. See this thread here.
Last, when both those are done, connect direct to the modem and try testing again. Make sure to use Cox's test to rule out any routing issues.

From here it appears you've been swapped up to the faster tier and the speed test history on the account also shows you're getting the benefit of that swap. I'm not entirely convinced yet however that more channels have finished deploying in your area as of yet.

@Chris thanks for continuing to follow up. The speeds have definitely gotten better. I think now I am just on the issue of channel bonding. Are you thinking that even with the increased speeds they haven't rolled out more channels in my area?

Some areas are still in the process of rolling out more channels so I wouldn't be immediately concerned about that issue just yet.
