Does Cox support the full 32x8 channel usage, or will it only use 8/16 channel down?
I am looking at upgrading and would like the full 32 channel down and 8 channel up utilized.

Depends on where you live. In general, I think most West Coast areas can do up to 24, East coast usually maxes at 16 and I have heard LA is worst with 12 in some areas. I see from your other post that maybe you live in AZ? I believe most of that state maxes out at 24 downstream, and 4 upstream.
These are just guesses based on what other people have posted. I don't think Cox actually breaks down which market can do what because it's changing so fast. How many are you getting now? Are you signal levels good?

Teck is correct, AZ currently maxes out at 24x4 channels, I have an Arris SB6190 myself and I'm in Tucson.

Yup, I just installed and I am maxed out at 24x4 with the new setup.
If only I had a Gigblast roll out time frame. Also IPV6 support would be awesome too.
I am in Phoenix.

Signal levels all look good. I am getting 24x4 with the new SB6190.

I can confirm that. I'm in the New Orleans area (Metairie, LA), and I get 12 downstream, 4 upstream. Signal levels aren't bad.
